Looking out over the harbour of Gustavia, Pablo Saint-Barth is Indie Group’s latest opening, bringing the familiar Pablo formula to the Caribbean. Following venues in Courchevel, Megève, Paris and along the French Riviera, this new address takes its cues from Pablo Saint-Tropez; reworked for island life and, in particular, the easy-living pace of Saint-Barth.
Situated directly on the port, the venue is split across two levels, each playing its own role as the day turns to night. Early evenings belong upstairs, the rooftop opening at sunset when the heat begins to drop and the harbour begins to fill. Natural materials, warm lighting and tropical planting give the space a relaxed, unfussy feel that suits its setting with perfection.
Food here is designed very much for sharing. The menu focusing on fresh fish, salads, tacos, sashimi, guacamole and quesadillas, alongside larger plates, and some seriously stellar views.
Later, the crowds head downstairs to the Night Bar, trading the rooftop’s laid-back vibes for something more charged. With cocktails and music a priority, mixologists get to work whilst the DJ keep things moving well into the early hours, drawing in the bons vivants who know the Pablo name and all that comes with it.
Pablo Saint-Barth keeps things straightforward, doing what the Indie Group does best. Overlooking Gustavia’s harbour, it slots easily into the island’s evening landscape, offering a steady transition from casual starts to late finishes. A cool and collected new hotspot for St. Barts’s cool and collected crowd.
