Füm arrives in Atlanta’s Westside with a fresh take on contemporary Italian dining, shaped by regional sourcing, open-fire cooking, and a respect for time-honoured technique. Built around the ritual of fire and smoke, the restaurant places dry-aged meats, handmade pastas, and seasonal produce at the centre of an experience that balances tradition with a distinctly modern point of view.
Named after the Italo-Gaelic word for ‘smoke,’ Füm is centered on a wood-fired open hearth and show kitchen that form the heart of the restaurant. Around it, the space unfolds through a sequence of distinct area, from the pasta-making room and dry-aging chamber to a dedicated wine space and a state-of-the-art cocktail bar by Oslo-based Behind Bars.
The project is a collaboration between Arcturis | square feet studio, Grassfed Hospitality, and HAND Studio, whose design approach draws inspiration from both classical Italian gathering spaces and expressive architectural forms. Gaudí-inspired sculptural gestures appear throughout, most notably in the dramatic curved soffit that hovers above the open kitchen. Referencing the bones and internal structures of the human body, these forms introduce softness and flow, shaping an environment that feels intimate despite its scale.
A palette of paprika red, pistachio green, and deep walnut brings character, while stainless steel details and textured limewash walls introduce a contemporary counterpoint. The result is a dining room defined by contrast.
Füm’s wine programme remains tightly focused, offering Champagne alongside Italian bottles that prioritise natural, organic, and biodynamic producers. The cocktail list follows suit, balancing Italian classics like the Negroni with alpine-inspired creations, each measured and refined.
Across both kitchen and bar, the emphasis is clear, food made slowly, techniques respected, and ingredients given the time required to speak for themselves. With plans already underway for Rabbit Ears, a rooftop cocktail bar set to open in the same building this April, Füm signals an ambitious new chapter for Atlanta’s evolving dining landscape, one built on fire, craftsmanship, and the enduring pleasure of gathering around the table.
