For farm-to-table dining in a quintessential country garden setting, Ibiza‘s Aubergine by Atzaró is a rustic, wholesome and healthy affair with dishes conjured from seasonal ingredients, many of which are grown in the organic vegetable garden at the nearby Atzaró Agroturismo Hotel estate.
Located in the very heart of rural Ibiza between the towns of Santa Gertrudis and San Miguel, and housed within a finely restored finca, Aubergine by Atzaró is a real ‘go-to’ for balmy summer evenings on the White Isle — its intimate garden filled with trees surrounded by lavender, fragrant herbs, orange trees and flowers, and its tables set beneath twinkling lights to ensure its position as one of the island’s most romantic spots to dine.
Head inside and you’ll find a dining room decorated with rustic white plastered walls, sabina and olive beamed ceilings, and simple shades of olive green that serve as a dominant accent throughout the entirety of the venue. Photos of Ibiza throughout the years hang on the wall providing a glimpse into the surrounding area’s rich history, whilst vintage pieces of pottery and regular exhibitions that showcase the work of local artists provide a more contemporary feel and demonstrate the venue’s commitment to shining a light on the creativity of those who call Ibiza home.
Encapsulating a sense of magical and authentic Ibizan charm, every Sunday diners are treated to sessions of live music, drinks and art; superbly accompanied by the Atzaró Boutique full of must-have artisanal clothes and accessories by local designers. The farm-to-table food concept is complemented by freshly made juices, fruit waters, osmosis-collected water, kombuchas and smoothies, as well as local wines and cocktails. Vegans and vegetarians are looked after here, the restaurant having been voted as one of the best vegan friendly restaurants on the island.
With dishes as beautiful to look at as they are delicious to devour, during our late-August dinner reservation — sat beneath glimmering trees and fresh flora on the outdoor terrace — our highlights included the colourful labneh with beetroot, mint, garlic, semi-dried tomato, pine nuts and sunflower seeds, served with naan bread; roasted aubergine carpaccio with cherry tomatoes, feta cheese, pomegranate, dates, pistachio and rocket pesto with tahini sauce and chilli oil; a delicate kale salad with endives, red cabbage, celery, pear, pomegranate with lemon, dates and ginger dressing; and a duo of plates cooked on the barbecue: steak for him, octopus for her.
With homemade deliciousness, country-chic Balearic feels, and food you can feel nourishing your body and soul, this is a project rooted in the heritage of this island and the intangible essence that drew so many with a connection to nature and spirituality.
