Dave the Butcher brings a taste of old-world Europe to Beacon’s Main Street, reimagined through the lens of modern Hudson Valley. The debut project by Now or Never Studio — conceived for husband and wife team Dave and Melissa Mountain — translates their shared devotion to craft and community into a singular, multi-layered experience, blending a Basque-style whole-animal butcher, with part European market, and part café-bar.
The concept began with a personal story, Melissa’s Basque heritage and Dave’s belief in slow, honest craftsmanship. From there, NoN Studio shaped a design that expresses the intimacy of tradition with contemporary hospitality.



Materiality drives the story; think dark-stained cherry, hand-forged steel, raw terracotta, and honed Italian Breccia marble. Each surface is considered with gathering patina and personality over time in mind, aging gracefully, adding layers to the couple’s ongoing story. Restored original wood floors and brick walls provide continuity with the building’s past, while open layouts enable conversation between butcher and customer.
Every element is custom-built, from the window seats and marble chef’s countertop to the cast-iron café tables. An audio system was also designed from scratch, underscoring the studio’s belief that atmosphere is as much about sound as it is the aesthetics.
Delighting locals with everything from Txistorra to Txuleta, and tipples such as Gilda Martinis, Dave the Butcher brings a whole other animal to Beacon’s Main Street.
