Trullo co-owner Conor Gadd goes it alone in Covent Garden, with velvet banquettes, handmade pasta, and an all-Italian wine list...

Chef and restaurateur Conor Gadd — best known as co-owner of London dining scene favourite Trullo — has just swung open the doors on Burro, a new Italian restaurant that marks his first solo venture as well as being a welcome new addition to Covent Garden.

“Never in my wildest dreams did I imagine opening a restaurant in Covent Garden. But as soon as I saw the room — and the courtyard — I knew it was an opportunity I couldn’t miss,” explains Gadd. “It’s been a labour of love with a brilliant team, and we can’t wait to welcome guests with some amazing food served in the warmest, most elegant of rooms.”

Designed by Lisa Helmanis of DAY Studio, Burro takes cues from the relaxed conviviality of Italian trattorias combined with subtle references to Gadd’s Irish heritage. Described as “part Irish country house kitchen, part 1950s Italian bistro,” the interiors favour warmth, familiarity, and understated elegance.

Walls finished in muted reds and dusty yellows reference Rome’s sun-faded façades, complemented by burgundy marble surfaces and softly curved timber detailing. Velvet banquettes paired with crisp white tablecloths introduce refinement, while lighting by Stileman Lighting casts a glow across the dining room, guiding the atmosphere from daytime lunches into evening service.

Artworks play an integral role in shaping the space. A large-scale canvas by artist Dan Ferguson spans almost an entire wall, depicting an Italian scene that brings cohesion to the room, alongside carefully sourced pieces and photography including striking images of Tuscan Butteri, selected by Gadd and Helmanis.

True to Gadd’s approach, Burro celebrates the generosity and simplicity of Italian cooking, with handmade pastas at the heart of the menu, seasonal secondi shaped by longstanding relationships with British farmers and fishermen, and desserts that revisit familiar classics. An all-Italian wine list curated by head sommelier William Amherst focuses on regional expression, supported by classic cocktails, Italian amari, and rare spirits.

A place for guests to settle in, stay awhile, and return to often, Burro is a restaurant built to last.
