Set within 18 hectares of pine forest just outside Lisbon, Doma Portugal continues its gradual transformation into a contemporary hospitality destination. The estate brings together rooms, glamping, co-working, a spa and a year-round programme of wellness; now joined by Bakery & Bistro by Doma, a new dining space that reflects the project’s wider evolution.
Designed by RHIZOME, the bakery and bistro serves seasonal breakfast and lunch, with a menu shaped by local ingredients, slow processes and a focus on everyday nourishment. Sourdough and coffee form a backdrop, with customers flocking to pick up a great loaf and strong brew.
The estate’s transformation is taking shape through a sequence of careful, considered steps. A former workshop has been repurposed to house the bakery, office spaces have been adapted into a breakfast restaurant, and a disused dining hall has been brought back into temporary use. Each move builds on what already exists, allowing the estate to evolve naturally over time.
Inside the bakery, the approach is expressed through a balance of Nordic restraint and Portuguese material traditions. Handmade terracotta tiles sourced locally sit alongside tabletops of mármore de Lioz, found on the property itself. Furniture combines existing and new elements: traditional ‘rabo de bacalhau’ chairs, mid-century folding pieces by Olaio, and restored shelving are paired with simple, custom-built additions and sustainably produced pine pieces by LUFE. Adjacent to the space, a productive garden supplies herbs and vegetables, reinforcing the project’s ambition to root gastronomy in the surrounding landscape.
RHIZOME describe the bakery as a clear expression of their methodology telling us: “The bakery, realised as the first phase, perfectly shows our approach. The new façade is realised as an independent and continuous timber structure, positioned behind the existing columns without touching them, articulating the building’s new function as something deliberately ‘inserted’ into the historic shell. Its perforations offer multiple configurations of openness and closure, allowing the building to breathe. The chosen palette resembles the quinta’s material character while asserting its contemporary identity through difference rather than mimicry. Inside, the plan is structured around an open kitchen, highlighting the performative act of baking as both hospitality and craft.”
At Doma, hospitality, wellness and food are brought into close alignment. Bakery & Bistro by Doma forms part of this wider concept where slow living, seasonal cooking and thoughtful design come together within a setting that continues to evolve over time.
