Overlooking the wide, sandy curve of Cala Llonga, where shallow turquoise waters meet pine-covered hills, Mondrian Ibiza is situated right on the shoreline of one of the infamous island’s more laid-back bays. Just 15 minutes from Ibiza Town — even less to Santa Eulalia — the location is close enough to dip into the action, yet far enough to disconnect; vibe dependent.
With design true to the spirit of the White Isle, Beades Architects and Cuarto Interior have created a spectacular space where open layouts, sculptural furniture, and natural textures sit against subtle bursts of colour. Artwork curated by London collective Gone Rogue nods to Ibiza’s long-standing creative pulse, while outside, four pools accommodate varying moods; from shaded calm to sociable afternoons with music drifting across the water. There’s also direct beach access and an adjacent boat dock that offers trips up and down the coastline, connecting you to hidden beaches and the island’s quieter corners. That is, of course, if you can tear yourself away from taking in the simply divine views of Cala Llonga’s rolling green hills and its crystal clear waters.
All 154 guest rooms and suites of this Ennismore property are spacious, presenting a calm, modern take on the island’s landscape, where natural materials are reworked into contemporary forms. While each room comes with a balcony as standard, many suites boast terraces with panoramic views and are complemented by warm wood and leather accents that create a space to unwind whilst marvelling at the natural beauty of this alluring bay.
Checking into a Panoramic Sea View Suite for three nights in late August 2025, we enjoyed 506 square feet of indulgence. With views of a bay that you just can’t stop looking at from all corners — including the King Bed and freestanding bathtub — the lounge-style suite was home to a living room, wrap-around terrace, two balconies, a full bathroom with separate shower, and a bounty of luxe amenities. Located on the fifth floor of the hotel, our suite was the perfect spot for lazy mornings and spectacular sunsets before heading out for dinner and drinks.

Food and beverage is a key part of the Mondrian. From artisanal coffee and pastries at The Perq to light snacks and sangria at the Pool Bar or tapas and cocktails at all-day destination Sun & Moon, guests need never leave the hotel once they’ve checked in. With the best of Ibiza’s cuisine throughout, the venues provide an authentic, atmospheric experience in first-rate surrounds.
The Mondrian is also home to Niko Al Fresco, a modern Japanese restaurant that stands out for its fresh ingredients and elegant backdrop, as well as Sonrojo, a beach chiringuito of sorts that overlooks the bay and combines a laid-back atmosphere with inventive updates on traditional Spanish fare.
Electing to catch the sunset on the Sun & Moon terrace on our first night, we order a Piscotheque and Old Fashioned, and settle on the large terrace to enjoy the views. Once the sun’s disappeared below the horizon, we walk a few steps to Niko Al Fresco where we’re shown to a table amid twinkling lights.
The setting is breathtaking, and feels a million miles from Sant Antoni where we’ve spent the previous night in rather less relaxed surroundings. Service is well paced as we chow down on tempura shrimp maki rolls, nigiri, sashimi, and a miso-glazed black cod, all of it washed down with a bottle of crisp white wine from Hungary.
After dinner, we leave the hotel to walk around the bay, ordering a nightcap in a local bar close to the sand, before retreating back to our suite.

The following morning is spent ‘hiking’ in the pine-covered hills. It’s late August and the sun’s blazing, so we take things relatively easy. With our 10,000 steps in the bank, we decide an afternoon lazing around the pool is on the cards.
We grab a Bali bed at the Mondrian Pool and shift between catching rays and refreshing dips. Later in the afternoon we move to the Hyde Wet Deck (a sort of step sister hotel, the Hyde shares the same grounds) and immerse ourselves in sun loungers situated directly in the pool. That evening we enjoy the sunset from our suite, before checking out the restaurants in the local vicinity.
Sonrojo is a classic beachside restaurant putting a modern twist on traditional Mediterranean flavours and demanding you take your time over and long, lingering lunch.
Our final day has to arrive, and after a much needed gym session (in a rather swanky gym, might we add) and few more hours at the pool, we enjoy our final meal at Sonrojo. With a lunch reservation, we kick off our sliders (sandy toes a must here) and order a tomato salad, Andalusian-style calamari, and a scarlet prawn rice; their version of paella, and the restaurant’s speciality. With a laid-back dining experience with a modern twist on traditional Mediterranean flavours, Sonrojo turns out to be a highlight of our visit.
