Where the Pancakes Are open a second restaurant in the UK capital, a focus on sustainable design seeing the batter obsessives collaborate with Overtreders W, a Dutch architect firm with a proven track record in circular design. As with their debut restaurant on Flat Iron Square, expect a menu that includes their iconic buttermilk pancakes with mostly savoury options, as well as small bites and sharing boards.

Located in Fitzrovia, the city’s number one destination pancake restaurant sets a new standard for green interior design in London, the architects ensuring any new materials were sustainable and made from recycled materials; the 2,200 square foot, two-floored 90-cover space designed to minimise future waste and ensure longevity.

A bright, spacious, and communal space in the heart of London, Overtreders W designed walls from old Dutch army uniforms, re-used the previous tenant’s marble to minimise what ‘may be’ waste (whether now or 50 years into the future), added acoustic light rafts on the ceiling made of 100% recycled PET bottles, and created a ground-floor area that features a bar, kitchen wall and benches that are made from wooden boxes. The space features many other modular structures that are dismountable, easy to disconnect, re-shape and reuse.

Taking pancakes very seriously indeed, Where the Pancakes Are offer menus that take into account different needs and diets, offering a 3-in-1 batter that’s dairy-free, wheat-free and vegan, whilst toppings can be as healthy or gluttonous as the diner chooses. Best sellers include an insane pulled beef pastrami with two pancakes, slow cooked brisket, cheddar, sauerkraut, 1,000 island sauce, kale slaw with toasted fennel seeds and home pickled cucumbers; and the ‘Royal’, two pancakes with St.Ewe’s poached eggs, hollandaise, tarragon, asparagus and a choice of smoked salmon, smashed avocado or streaky bacon. Blimey.

As founder Patricia Trijbits explains, “creating cohesion between beautiful pancakes made with carefully sourced ingredients and a relaxed, sustainable, functional environment in which to eat them, is fundamental to Where the Pancakes Are.” As you can see, Overtreders W have obliged accordingly, and the brand’s Fitzrovia location is a surefire success story in the making.
