Brooklyn‘s Bed-Stuy neighbourhood welcomes Selune, a refined yet approachable natural wine and oyster bar housed in a nearly century-old landmark building. With space for 50 seated guests, the new neighbourhood hangout is the brainchild of Parisian hospitality veteran Marc Lioussane (formerly of Eden Rock, St. Barths) and his partner Bilen Gaga, whose Ethiopian heritage and background in fashion inform the space’s distinctive design.

Named for the lyrical interplay of ‘salt’ and ‘moon’ in French, Selune brings a conversational, globally-minded take to natural wine culture. With a list curated by Lioussane, the menu features more than 120 bottles from France, the US and beyond, alongside Japanese sakes and seasonal cocktails. Highlights include Château Barouillet’s juicy pet nat ‘Splash’ 2022, a yuzu-infused sake from Miyakobijin Shuzo, and bold pours like Fabien Jouves’ provocatively titled ‘You F&@k My Wine’ 2024. Cocktails are sunny and herbaceous — like the corn and chile Dirty South or the miso-laced Sunset Martini — while non-alcoholic options such as Red Ruby with tomato water and cherry offer depth without spirits.

The food menu keeps pace with a daily rotating list of oysters, offered at $1 each during Happy Hour, alongside French-inspired small plates. Think scallop carpaccio with pomegranate, snow crab salad with grapefruit and honey mustard dressing, and a truffle Croque Monsieur served on brioche with aged comté and Parisian ham.

Selune’s interiors are led by Bilen’s keen design perspective and embrace the old soul of the building with exposed brick and salvaged walnut detailing, complemented by red oak tables crafted by upstate New York’s Rescue Slabs. Brushed gold fixtures and lush greenery offset earthy textures, while traditional Ethiopian artworks add a deeply personal layer to the space. It’s a setting that speaks to both legacy and locality, elevated by the global vision of its founders.
